the 1970s, Carteret County Nutrition Leaders have met monthly with Sea
Grant seafood specialist Joyce Taylor in NC State’s Seafood Lab kitchen
to test the best way to handle, store and prepare local fish and shellfish.
Their 30-year legacy will endure with Mariner’s Menu: 30 Years of Fresh
Seafood Ideas, published this fall by North Carolina Sea Grant. Along with more than 160 original recipes, this comprehensive guide contains safety tips and instructions on cooking methods and preparation techniques. The project has been a major undertaking for the Sea Grant communications team and the NC State Seafood Lab, which houses the Sea Grant seafood staff. The book is written by Joyce Taylor, edited by Sarah Friday Peters — who worked with Taylor at Sea Grant from 1984-1989. It is illustrated with detailed drawings by Morehead City artist Connie Mason. Photos by Scott Taylor of Beaufort reflect seafood’s vital role in coastal communities. Mariner’s Menu is being distributed in bookstores nationwide by University of North Carolina Press. The N.C. Department of Agriculture and Consumer Affairs, Seafood Marketing Division, will enhance our marketing efforts and purchased the first 750 copies.
